Recipe Ingredients for Tofu Mashed Potatoes

4 yukon gold potatoes
2 garlic cloves
3/10 cup shredded parmesan
6 oz. tofu
1/2 c non fat milk
2 T. Olive oil
1 T. Butter

Recipe Directions for Tofu Mashed Potatoes

  1. Boil diced potatoes and garlic

  2. Blend tofu and olive oil in food processor

  3. Drain, then mash potatoes with butter

  4. Add tofu mix and milk to right consistency

  5. Add parmesan cheese

  6. Add salt and pepper to taste
