Recipe Ingredients for Tofu, Leek, and Almond Stuffed Portobellos

3 tbsp olive oil
4 c leeks, sliced
2 c fennel bulb, chopped
1 tsp ground fennel seeds
1/2 tsp dried thyme
1/2 tsp salt
1/4 tsp ground black pepper
16 oz firm tofu, grated
3 tbsp soy sauce
1/2 c toasted almonds, chopped
6 portobello mushrooms

Recipe Directions for Tofu, Leek, and Almond Stuffed Portobellos

  1. Warm 2 tbsp of the olive oil in a skillet on medium-low heat and cook the leaks and fennel for 5 minutes, stirring occasionally. Add the ground fennel, thyme, salt, and pepper, and cook, covered, on low heat, stirring occasionally, until the vegetables are tender, about 10 minutes.

  2. In a bowl, combine the cooked leeks and fennel with the grated (or crumbled) tofu, soy sauce, and almonds. Mix well.

  3. Break off the stems of the portobellos. Rinse the caps gently and brush lightly with the remaining olive oil. Place smooth side down in a lightly oiled baking dish large enough to hold them in one layer.

  4. Mound each mushroom with about a cup of the tofu mixture and press down gently.

  5. Bake uncovered at 350 F until the mushrooms are tender, 35 to 40 minutes.
