A Vegetarian alternative to hearty Lasagna

Recipe Ingredients for Tofu Lasagna

13 oz Lasagna Noodles or Manicotti Shells
1/4 cup Green Onion, sliced
2 cloves Garlic, minced
1 tbsp. Olive Oil
2 Egg Whites
1/2 cup Ricotta Cheese
1/4 cup Parmesan Cheese
1/2 cup Mozzarella Cheese
1/2 a block Tofu
1/3 cup Parsley, sniped
2 cups Tomato Sauce
1/4 c. green pepper
1/2 tsp. dried basil

Recipe Directions for Tofu Lasagna

  1. Cook pasta according to directions on the box

  2. Saute onion and garlic in oil and set aside

  3. Stir together egg whites, cheeses, tofu and parsley

  4. Add onion and garlic

  5. Layer lasagna noodles, cheese, tofu mixture and sauce --or-- stuff manicotti shells with cheese and tofu mixture and arrange in 8X8 baking dish. Pour sauce over shells

  6. Cover and bake at 350 for 35-40 minutes
