Vegetarian Modification of Chicken a la King from an Elvis cookbook ("Are You Hungry Tonight?")

Recipe Ingredients for Tofu a la King

1 tsp canola oil
1 tsp butter
24 ounces firm tofu
1/2 tsp salt
1/4 tsp pepper
1 1/2 cups light sour cream
2 1/3 tbsp tamari
1 tsp paprika
2 tbsp white wine
2 ounces frozen peas, cooked
2 ounces fresh sliced mushrooms
1 ounce onion, small diced
6 slices whole grain bread, toasted and cut into 4 triangles

Recipe Directions for Tofu a la King

  1. Slice tofu 1/4-inch thick. Brush each slice, back and front, with tamari soy sauce and allow it to marinate for 10 minutes, reserving 1 teaspoon of tamari for later use.

  2. Lightly coat a baking sheet with the teaspoon of canola oil.

  3. Place tofu on the lightly oiled baking sheet and bake for 30-35 minutes, turning once halfway through, until a deep, golden brown and crispy on the outside but still tender on the inside. Remove from oven and cut each tofu slice into 8 cubes and set aside for later.

  4. Melt the butter in a large, nonstick frying pan and add the mushrooms. Cook to a sweat, then add the sliced mushrooms and cook to a sweat, also.

  5. Sprinkle onion and mushrooms with salt and pepper, then stir in sour cream, 1 tsp soy sauce, and paprika.

  6. Reduce the heat to low and cook until the sauce is hot, but not boiling.

  7. Stir in the white wine and cook for one minute more.

  8. Add the hot, cooked peas and gently fold in the baked tofu.

  9. Pour into a greased 1 1/2 quart shallow baking dish and sprinkle with the parmesan cheese.

  10. Put under the broiler until the top is lightly browned, about 4 minutes.

  11. Serve garnished with the toast points.
