Pan Fried Tofu, Kale, and Stir-Fried Noodles

Recipe Ingredients for Tofu Kale Stir-Fry

14 oz. extra firm tofu
3 cups kale, devined and torn
5 oz. Wide Rice Noodles
1/4 cup water
1/4 cup soy sauce
1 tablespoon minced ginger
1 tablespoon maple syrup
1 tablespoon extra virgin olive oil
1 tablespoon seasoned rice vinegar
1 garlic clove, minced
1/2 teaspoon dijon mustard
1/4 teaspoon sriracha

Recipe Directions for Tofu Kale Stir-Fry

  1. Press tofu to remove excess water.

  2. While pressing tofu mix together all the ingredients starting from water, down.

  3. Cut the tofu into 8 equal sized rectangles and let sit in marinade for about 30 minutes, turning halfway through.

  4. Meanwhile boil the rice noodles until just tender. Rinse in cold water and drain. Set aside.

  5. Heat a large cast-iron pan over medium-high heat. Lightly oil, and add tofu. Brown tofu on one side and flip over. Spoon marinade and continue to do so until tofu is fully cooked. Remove and set aside.

  6. Heat a little more oil in your pan and add kale. Once softened, add the noodles and toss.

  7. Flavor with marinade or soy sauce. Remove and add the now firmed tofu.
