Recipe Ingredients for Tofu with Japanese Soba Noodles

1 cup, noodles, japanese, soba, cooked
1 tbsp extra virgin olive oil
1 cup mushrooms, cooked, boiled, drained
1/2 cup shredded green cabbage
1 tbsp chopped scallions
100 grams bean sprouts
3/4 cup yellow squash
81 grams Tofu, raw, firm, prepared with calcium sulfate

Recipe Directions for Tofu with Japanese Soba Noodles

  1. Boil noodles for 15 minutes, drain, and set aside.

  2. In wok add the olive oil and then all the vegetables.

  3. Cook for about 15 minutes, then add Tofu (cut into pieces).

  4. Cook for another 5-10 minutes, then add the cooked noodles.

  5. Stir the noodles, vegetables, and tofu together for about 5 minutes or until well blended.

  6. Serve.
