The trick is to freeze the tofu on this one.

Recipe Ingredients for Tofu Jambalaya

1 pound extra firm tofu, frozen then thawed
1 cup chopped onion
2 cups chopped bell pepper
1 cup chopped celery
3 cloves chopped garlic
1 cup brown rice
28 ounces diced tomatoes
1 cup vegetable broth
1 1/2 teaspoon chili powder
1 teaspoon thyme

Recipe Directions for Tofu Jambalaya

  1. Saute onion, pepper and celery until soft

  2. Add rice and garlic, stir until browns

  3. Add tomatoes, broth, spices and stir

  4. Gently stir in tofu

  5. Cook covered on low for 30 minutes, or until rice cooks and liquid is absorbed
