Recipe Ingredients for Tofu Frittata

1 pound tofu
6 tablespoons unbleached white flour
1/4 cup nutritional yeast flakes
1 tablespoon of water
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon turmeric
1/4 teaspoon white pepper
2 tablespoons extra-virgin olive oil
1 large onion, thickly sliced
2 medium potatoes, cooked and sliced

Recipe Directions for Tofu Frittata

  1. Preheat the oven to 450F.

  2. Place 1 tablespoon olive oil in each of two 10-inch cast-iron or non-stick oven safe skillets or baking dishes, and place them in the oven while it heats up.

  3. Blend all the ingredients for the batter (from the tofu to the white pepper) in a food processor or blender until very smooth.

  4. Add the onion and any vegetables that need to be sauteed to the hot oil in the pans in the oven. Bake them for about 5 minutes, then add them to the batter in a bowl, along with all the other additins, and the potatoes, pasta, etc. Lover the oven temperature to 350F.

  5. Divide the mixture evenly between the two skillets, and spread evenly to the edges. Sprinkle with pepper and soy parmesan (optional).

  6. Bake for 30 minutes.

  7. Cool the skillets on racks for 10 minutes, then loosen the bottom of the frittatas and cut each into 6 pieces.

  8. Eat warm or at room temperature.

  9. Optional additions (1 to 2 cups total)

  10. 1 tablespoon to 2/3 cup chopped fresh herbs

  11. Chopped vegetarian ham, bacon, pepperoni, etc.

  12. Sliced black Italian olives

  13. chopped sun-dried tomato

  14. cooked, canned or marinated artichoke hearts, thinly sliced

  15. 2 cloves garlic, minced

  16. etc.
