Quick and easy fried rice with tofu

Recipe Ingredients for Tofu fried rice

1.5 cup Brown Rice
0.75 cup Soft
0.5 medium (2-1/2" dia) Onions
1 large Egg, Whole
1 cup, pieces or slices Mushrooms
1/2 cup chopped raw Grape Tomatoes

Recipe Directions for Tofu fried rice

Heat oil in skillet or wok. Add rice and onions (or scallion) and cook until onions are soft. Add the rest of the ingredients and cook about 10 minutes. Other options: add garlic, sesame oil, etc. I like to garnish with a little cilantro.
