Recipe Ingredients for Tofu Fried Rice

2 cup Rice, White, Long-grain, Regular, Cooked
2 cup Rice, Brown, Medium-grain, Cooked
12 oz Organic Tofu Firm
2 large Egg, Whole
1 tbsp Vinegar balsamic
2 cup flowerets Broccoli, Flower Clusters
2 medium Carrots
4 cup, chopped Cabbage
1.5 cup Corn, Sweet, White
2 serving Soy Sauce
3 medium (4-1/8" long) Onions, Spring Or Scallions
1 cup Water Chestnuts
5 serving Canola Oil

Recipe Directions for Tofu Fried Rice

  1. Place cooked rice in a bowl. Separate the grains by rubbing between wet fingers. Set aside

  2. Spray a wok or large frying pan with cooking spray. Cook the lightly beeten eggs over medium heat until saft curds form. Transfer to a bowl and set aside.

  3. Add a tablespoon of oil to the pan over medium high heat. When hot add tofu and stir constantly until it begins to brown. Add the vinegar, stir and cook for 30 seconds. Add tofu to the eggs.

  4. Add another tablespoon of oil to the pan, heat, and add broccoli, carrots and cabbage. Stir fry until they begin to soften. Add corn and cook for one minute longer. Add vegetables to the tofu and eggs.

  5. Add the remaining oil. When hot, stir fry rice until lightly browned, about 5 minutes. Add 1/4 cup water, soy sauce, and green onions and stir to combine. Add the reserved ingredients and the water chestnuts. Stir until egg is broken into pieces and the mixture is heated through.
