Recipe Ingredients for Tofu Florentine

1 pound fresh spinach, fresh, washed
1 pound extra firm tofu
1 tablespoon olive oil
2 cloves garlic, minced
3 tablespoons lemon juice, fresh
2 tablespoons soy sauce
1 tomato, chopped

Recipe Directions for Tofu Florentine

  1. Heat broiler.

  2. Press tofu slightly. Slice tofu into small triangles.

  3. Mix .25 cup water, garlic, lemon juice, soy sauce in small bowl.

  4. Spray broiler with olive oil.

  5. Dip pieces of tofu in braising liquid and place on pan.

  6. Broil 10 minutes, until lightly browned.

  7. Add more braising liquid. Broil 3 minutes.

  8. Repeat until tofu is golden brown.

  9. Hold warm until spinach is lightly sauteed.

  10. Layer Home fries, Spinach, tofu, and cheezy sauce. Serve.
