Healthier version of enchilada's made with tofu.. *NOTE- this recipe also calls for 1/2 cup enchilada sauce, but I made without since I didn't have any at the time!

Recipe Ingredients for Tofu Enchiladas

158 g (1/2 pkg) extra firm tofu
112 g. (1/2 cup) Amy's traditional refried beans
1/2 cup chopped onion
3 tsp. taco seasoning
3 Tortillas (I use La Tortilla Factory)
1 oz. (1/4 cup) kraft fat free shredded cheddar cheese

Recipe Directions for Tofu Enchiladas

  1. Strain tofu well

  2. add chopped onions, refried beans, and chopped tofu to skillet on medium heat, cook until browned

  3. Heat tortilla's in microwave until warm

  4. Evenly divide mixture between 3 tortilla's, then fold and place fold facing down in lightly greased bake pan

  5. Bake at 375 for 10 minutes, sprinkle with cheddar cheese then bake for 5 more minutes
