Recipe Ingredients for Tofu/egg scramble with veggies

3 eggs, organic, omega-3
2 tbsp. flax seed, ground
12 3/10 oz lite tofu, firm
1 1/2 tbsp basil, fresh
1 pinch basil, dried
1 pinch black pepper
1/3 cup portabella mushroom
2 Roma tomatoes
1 zucchini, small
1 yellow onion, large
3/4 cup spinach, fresh
2 tsp extra virgin olive oil, organic
1/3 cup skim milk

Recipe Directions for Tofu/egg scramble with veggies

  1. chop and saute vegetables

  2. crumble tofu

  3. mix tofu, eggs, pepper, basil, milk

  4. scramble egg/tofu mixture

  5. serve egg/tofu mixture with sauteed vegetables on top or mixed in
