This is my "splurge" soup. It's delicious and I did my best to clean it up, but it's still a treat since it's higher in fat than some of my other recipes.

Recipe Ingredients for Tofu and Dumpling Soup

2 cups spelt flour
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp sugar
1/3 cup shortening
3/4 cup milk
2 1/2 liters Chicken Stock
3 tbsp. Butter
3 cups Tofu cut into cubes
1 1/2 cups milk
1 Onion
2 cloves Garlic
1/2 cup white wine
3 cups Carrots
3 cups Celery
3 cups Mushrooms
1 cup tomato sauce
1 tsp. salt
1 tsp. pepper
1 tsp. Thyme
1 tsp. Sage
1 tsp. Parsley
2 tsp. cayenne pepper

Recipe Directions for Tofu and Dumpling Soup

  1. Make "self rising flour" by adding 2 1/2 tsp. of baking powder and 1 tsp of salt to the flour.

  2. In a large bowl, combine the flour, salt, pepper and sugar. Cut the shortening in with a pastry blender until the mixture resembles small peas.

  3. Make buttermilk by adding 2 Tbsp. vinegar to the 3/4 cups of milk. Add the buttermilk to the flour mixture and stir with a fork just until the dough forms a ball. On a lightly floured surface, roll out the pastry until it is 1/8 inch thick and cut it into 1 inch squares. Set aside.

  4. In a large pot, heat 1 Tbsp. oil over med. heat. Add Onions and Garlic and sautee for one minute. Add Mushrooms and fry until they are soft.

  5. Add all of the chicken stock and bring to a rolling boil, add the butter and continue to boil until it melts. Gradually drop the pastry squares in, one at a time, stirring to prevent sticking.

  6. Add all remaining ingredients except milk. Stir and then pour the milk over it all. Return to a boil, Cover and reduce heat to medium-low. Simmer for 20 minutes until the dumplings are cooked through. Do not remove the cover during this time.

  7. After 20 minutes, remove the lid and add more milk if the mixture is too dry. Enjoy!
