You can saute the mushrooms when making the gravy, but preparing it this way keeps down the calories, and the broth is amazing.

Recipe Ingredients for Tofu Cutlets with Mushroom Gravy

6 oz extra firm tofu, pressed and drained
1 tbsp dijon mustard
2 tsp honey
2 tsp balsamic vinegar
1 tbsp soy sauce
4 cloves garlic, minced
1 tbsp poultry seasoning
2 tsp fresh sage, chopped
2 tsp fresh thyme
2 tsp fresh rosemary, chopped
3/4 cup water, boiling
1 tsp olive oil
8 oz mushrooms, sliced
1 cup vegetable broth
1 tbsp flour (or cornstarch)

Recipe Directions for Tofu Cutlets with Mushroom Gravy

  1. Slice tofu into 1/4-inch thick "cutlets."

  2. Make the marinade: stir together all ingredients from dijon mustard to 3/4 cup boiling water.

  3. Place the cutlets in a shallow pan in a single layer. Pour over the marinade. Cover and refrigerate for at least two hours or overnight (the longer the better).

  4. Make the gravy: put the mushrooms in a saucepan with the vegetable broth. Simmer until the water darkens and the mushrooms are cooked (approximately 10-15 minutes). Pour off the marinade into a bowl and whisk in the flour or cornstarch. Slowly add the mixture to the mushrooms and cook for another 5 minutes or so, stirring frequently.

  5. Heat a heavy frying pan and spray or wipe with the olive oil. Fry the drained cutlets until perfectly browned on both sides. Serve with the gravy poured over the top.
