Tofu Curry Recipe

Add curry seasoning, no paste. Nutmeg-salt-pepper to taste.

Recipe Ingredients for Tofu Curry

8 tbl coconut milk
2 1/2 cups sweet potato, cubed
2 cups onion, quartered
4 cloves garlic, minced
12 oz tofu
1 cup brown rice
1 1/2 cups chicken stock
1 cups peas

Recipe Directions for Tofu Curry

saute sweet potatoes until soft with cooking spray add the onions saute until soft and add the garlic. Deglae the pan with a small amount of chicken stock. Pre season the tofu with curry seasoning and throw into the pan. Meanwhile put your rice in the microwave. Once tofu start to brown add the rest of your coconut milk and allow to simmer until the liquid starts to absorb add the remaining chicken stock and allow to simmer for a few additional minutes and add your peas at this time. Pull your rice out of the microwave place on plate scoop out tofu curry over rice and enjoy.
