Yummy "cream cheese". No dairy added!

Recipe Ingredients for Tofu Cream Cheese

1/2 pound firm tofu
2 tablespoons chopped scallion
2 tablespoons fresh lemon juice
2 tablespoons chopped celery
1/2 teaspoon onion powder
2 tablespoons chopped radish
1/2 teaspoon garlic powder
2 tablespoons chopped green bell pepper

Recipe Directions for Tofu Cream Cheese

  1. Place the tofu in a saucepan with water to cover and bring to boil.

  2. Boil for 1 minute. Drain. Place the tofu in a clean linen napkin or a double thickness of cheesecloth and draw the ends together to form a sack. Twist gently, squeezing out all the water.

  3. Place the tofu in a food processor o blender with the lemon juice, onion powder, and garlic powder. Process until smooth. Pour into a covered container, mix in the chopped vegetables, and chill for an hour or two before serving.
