3/4 cup vegetable broth
1 tsp brown sugar
2 tsp tomato puree
14 fl oz lite coconut milk
2 cups butternut squash
1 cup red bell pepper
1/2 cup baby corn
1 cup tofu
2 cups basmati rice, cooked
1/4 cup lime juice

Recipe Directions for Tofu cocount broth

  1. Add all ingredients to pan

  2. Simmer for 10 minutes

  3. Add rice 2 minutes before end
