good summer dinner severd with quinoa The recipe included 1/4 c reduced sodium soy sauce which I forgot to put in, but did not miss it. Also I used Goya cream of coconut which had sugar added, was 140 cal for 2 T. Instead in recipe I put 3 T sugar and 3.3 T coconut cream which added to the same grams of sat. fat and sugar and calories. Next time I would put some coconut flakes on this, or increase the coconut (hopefully without the sugar), since this time it was hard to taste the coconut

Recipe Ingredients for Tofu with coconut, peaches and peppers

2 T water
3 3/10 T cream of coconut
3 T sugar
1 T rice vinegar
1/4 teaspoon pepper
1 t cornstarch
4 T minced fresh ginger, juiced
3/4 c onions, chopped
14 ounce extra-firm tofu, drained
1 tablespoons olive oil, divided
1/2 red bell pepper, cut into strips
1/2 yellow bell pepper, cut into strips
1 c canned peaches
2 cloves garlic, minced
1 T lime juice
2 T cilantro, chopped

Recipe Directions for Tofu with coconut, peaches and peppers

  1. drain tofu and cut into bite size squares

  2. Wisk the first seven ingredients, keep aside in bowl

  3. heat 1/2 T oil in non-stick skillet and cook tofu until golden, put on plate and cover

  4. heat the next 1/2 T oil and saute onions until golden, add garlic, saute till garlic is fragrant, add pepper and peaches. Add liquid from bowl, bring to a boil and lower to simmer, add lime juice, add the tofu, toss together lightly, keep warm.

  5. Serve over rice or quinoa
