This is a quick, kid-friendly curry (not spicy). I serve it over cellophane noodles.

Recipe Ingredients for Tofu Coconut Curry

13 1/2 fl oz Lite
2 tbsp Oil, Peanut
1 medium raw Bell Pepper Red
2 cups zucchini
3 tbsp soy sauce
1 tbsp fresh ground ginger
3 tbsp lime juice
12 3/10 oz lite tofu
1 1/2 tsp thai red curry paste

Recipe Directions for Tofu Coconut Curry

  1. Heat 1 tbsp of peanut oil in a large wok.

  2. Sautee the cubed tofu until golden (about 5 minutes).

  3. Remove the tofu from the pan and reserve.

  4. Add the other tbsp of peanut oil to the wok and warm it.

  5. Sautee the red bell pepper and zucchini until soft, about 4 minutes.

  6. Return the tofu to the wok, also adding the ginger, lime juice, soy sauce, thai red curry paste and coconut milk.

  7. Cook through, about another 5 minutes.

  8. Serve over rice or cellophane noodles.
