YUM! The tofu is a little hard to get used to - I am not a vegetarian I just want to eat healthier. I added cilantro and fresh jalepeno when serving - it's also great with a little squeeze of fresh lime

Recipe Ingredients for Tofu Chili

12 ounce extra firm tofu
2 teaspoon chili powder
1 teaspoon cumin
2 clove garlic, minced
1 tablespoon olive oil
1 cup onion, chopped
4 stalks celery, chopped
1 can tomato paste
15 1/4 ounce corn, drained
15 1/4 ounce kidney beans,drained
29 ounce diced tomato
3 tablespoon cilantro
1 teaspoon kosher salt

Recipe Directions for Tofu Chili

  1. In a medium bowl, crumble the tofu and toss with the chili powder and garlic.

  2. Heat the oil in a large saucepan over medium heat, and saute the onion and celery until tender. Stir in the tofu mixture. Continue cooking about 5 minutes over low heat.

  3. Mix in the corn, kidney beans, and stewed tomatoes. Reduce heat to low and simmer about 50 minutes
