Recipe Ingredients for Tofu and Cheese Strata Muffins

4 oz. firm tofu
8 oz. wholewheat bread (4, 2 oz. slices)
2 oz. fat free cheese
6 egg whites
1/2 cup 1% milk
1/4 tsp. black pepper

Recipe Directions for Tofu and Cheese Strata Muffins

  1. Preheat the oven to 350 F.

  2. Thinly slice the tofu, lightly salt and brown in non-stick pan.

  3. Top 2 slices of bread with cheese and tofu then crown with the remaining slices.

  4. Cut each sandwich into 12 cubes.

  5. Lightly pack 4 cubes of sandwich into each muffin cup.

  6. In a bowl, whisk together the egg whites with the milk and seasonings.

  7. Spoon the egg whites over the cubes, let stand for about 10 minutes.

  8. Bake for 30 minutes or until golden. Let stand for another 15 minutes and remove from the muffin cups.
