Recipe Ingredients for Tofu Calzones with Low Fat Ricotta

1 cup Light Ricotta Cheese
15 oz Extra Firm Tofu
10 oz Diced Tomatoes with Basil Garlic and Oregano
8 oz Whole Wheat Pizza Dough
120 grams Spinach
0.75 cup, shredded Mozzarella, Whole Milk Cheese
4 serving Crushed Red Pepper
3 tsp Garlic Powder
4 dash Salt, Table
4 dash Pepper, Black

Recipe Directions for Tofu Calzones with Low Fat Ricotta

  1. Preheat the oven to 475.

  2. Drain the tofu and pat it dry.

  3. Finely crumble the tofu into a large bowl and mix with tomatoes, chopped spinach, ricotta, basil, onion or garlic powder, salt and pepper. Mix well.

  4. Separate the pizza dough into 4 equal portions and roll out each one separately to about a 6-8 inch diameter.

  5. Spread 1/4 of the filling onto half of each of the rolled out pieces of dough.

  6. Fold the other side of the dough over top of the filling and pinch the edges closed.

  7. Carefully transfer the calzones to a nonstick baking sheet.

  8. Poke a few holes in the top of each calzone and spray lightly with olive oil or canola spray.

  9. Bake the calzones for 15-20 mins until the tops are golden brown.
