Recipe Ingredients for tofu banana bars

1/4 package Soft
4 oz SPLENDA Brown Sugar Blend
1 tsp Vanilla Extract
2 medium (7" to 7-7/8" long) Bananas
1.25 cup Whole Wheat Flour
1.5 tsp Baking Powder

Recipe Directions for tofu banana bars

  1. Tofu Banana Bars

  3. Ingredients:

  4. 1/4 cup silken tofu (regular tofu would work too)

  5. 3/4 cup brown sugar

  6. 1/2 tbsp vanilla extract

  7. 1/2 tsp rum extract

  8. 2 large ripe bananas (mashed)

  9. 1 1/2 cups flour

  10. 1 1/2 tsp baking powder

  11. 1 teaspoon salt

  12. 3/4 cup sweetened flake coconut

  13. For topping:

  14. 1/3 cup powdered sugar

  15. 1 tsp cinnamon

  16. Directions:

  17. Preheat oven to 350 F degrees.

  18. Blend the tofu in a blender until smooth. Remove the mashed tofu into a bowl

  19. Add the sugar and whisk until well mixed. Add the vanilla, rum, mashed bananas, and stir until everything is well incorporated.

  20. In a separate bowl, mix the dry ingredients (flour, baking powder, and salt ). Add the coconut.

  21. Pour the tofu/banana mix into the dry ingredients. Mix well but don?t over mix or else the bars will bake to become tough.

  22. Pour into well-greased baking dish and bake for 25-30 minutes (until toothpicks come out clean)

  23. Meanwhile make the powdered sugar/cinnamon topping. Set aside.

  24. Remove from the oven. Sprinkle (generously) the mixture of powdered sugar and cinnamon over the bars
