A delicious vegan stir-fry that's almost got every colour of the rainbow!

Recipe Ingredients for Tofu-Almond Stir-Fry

3 cup Beans, Snap, Green
1 pepper, large (3-3/4" long, 3" dia)(186 g) Peppers, Sweet, Yellow
1 medium Orange Hothouse Bell Pepper
2 cup (1" cubes) Eggplant
3 carrot Carrots
1 block Tofu, Firm
3 tbsp Oil, Sesame
6 tbsp Olive Oil
1 1/2 cup, whole Almonds
45 grams Soy Sauce
5 g Cumin Powder
1 tsp Chili Powder
3 cloves Garlic

Recipe Directions for Tofu-Almond Stir-Fry

  1. Dice eggplant and peppers. Cut carrot into thin strips about 1/4 inch wide. Cut tofu block into thin pieces.

  2. Marinate tofu with sesame oil, cumin, chili powder and tamari.

  3. Fry tofu, eggplant, garlic and peppers in oil.

  4. Add carrots and beans and a little water. Cover and let steam until cooked.

  5. Meanwhile, toast the almonds to bring out the flavour.

  6. Serve with toasted almonds on top!
