My mom's recipe for a simple, tofu sandwich.

Recipe Ingredients for Tofu, Alfalfa sprout Sandwich

1/5 pkg Extra Firm
2 slices Sandwich Bread
1 tbsp Mayo Fat Free Mayonnaise Dressing
1 oz Alfalfa Sprouts
1/3 cup Yellow Corn Meal
4 tbsp Soy Sauce
6 tbsp Vegetable Oil, Canola

Recipe Directions for Tofu, Alfalfa sprout Sandwich

Prepare 2 small plates, one with a good layer of corn meal covering the bottom, and the other with a good layer of soy sauce covering the bottom. Squeeze dry a slab of tofu and cut 2 slices of tofu at about 3/4cm thick. Lay each slice of tofu in the soy sauce for about a minute, turning halfway through making sure that all sides get covered. Immediately lay the soy sauce-covered slabs of tofu into the corn meal and press down lightly to get a good layer of corn meal on all sides of each slab of tofu. On a heated frying pan, with a good layer of vegetable oil, add the slabs of tofu and fry until tofu is cooked all the way through, making sure to always be turning so that the corn meal does not burn. This should take about 10 minutes or so. When finished, add to bread that that has a small layer of mayo, and to that, add a heaping layer of alfalfa sprouts. There you go!
