Use already roasted vegetables and pre-grill the chicken breast. I roast veggies in a big batch and store them in the fridge.

Recipe Ingredients for Todd's Favorite Veggie Pasta

2 oz. Whole Wheat Pasta
1 oz. Broccoli
1 oz. Mushrooms
1 oz. Zucchini
1 oz. Onions
1 oz. Asparagus
2 tbsp Olive Oil
1/2 cup Chicken Stock
2 tbsp parmesan cheese

Recipe Directions for Todd's Favorite Veggie Pasta

  1. Cook Pasta; drain

  2. Heat Olive Oil in saucepan, add broccoli and garlic, cook for a minute over medium heat. Add rest of veggies and chicken stock. Bring to a boil, return pasta to pan and reduce heat. Simmer for 5-10 minutes until liquid reduces. Serve on a plate and top with the cheese.
