Recipe Ingredients for Toasted Vermicelli with Fresh Salsa

5 oz dried angel hair pasta, broken into 1/2 inch pieces
1/2 cup chopped onion
1 clove garlic, thinly sliced
2 tbsp olive oil
2 tomatoes, peeled, seeded, and chopped
2 cups chicken broth
3 fresh jalapeno peppers, seeded and thinly sliced
1/2 tsp dried oregano, crushed
1/4 tsp ground cumin
1/4 tsp salt
2 tsp snipped fresh cilantro
1 Chopped fresh tomatoes (optional)

Recipe Directions for Toasted Vermicelli with Fresh Salsa

In a large skillet cook pasta, onion, and garlic in hot oil for 5 minutes, or till pasta is golden and onion is tender, stirring constantly. Gently stir in 2 tomatoes, the chicken broth, jalapeno peppers, oregano, cumin, and salt. Bring to boiling; reduce heat. Simmer, uncovered, for about 8 minutes, or till pasta is al dente. Stir in cilantro. Transfer to a serving dish. If desired, garnish with chopped tomatoes.
