Simialr to a panzanella salad(which uses stale bread-eww!) This uses fresh bread and you toast it. Don't toast long enough to make croutons, just to give the edges some crunch!

Recipe Ingredients for Toasted Panzanella Salad

1 cup bread
1/2 tomato
1/4 cucumber
1/4 onion
1 cup romaine
1/8 cup extra virgin olive oil
1 tbsp red wine vinegar
1/2 tsp dried basil
1/2 tsp dried cilantro

Recipe Directions for Toasted Panzanella Salad

  1. Use good italian bread.

  2. cut into bite size cubes and toast slightly.

  3. rough chop veggies to bite sized pieces.

  4. toss the salad

  5. then add the EVOO & vinegar

  6. toss again & allow to sit for at least 10 min before serving
