Recipe Ingredients for Toasted Orzo with Peas and Parmesan

2 T. butter
1 medium onion, chopped
3/4 tsp. salt
2 tsp. minced garlic
1 lb. orzo
3 1/2 cups low sodium chicken broth
3/4 cup dry white wine
10 oz. frozen peas
2 oz. Parmesan cheese, grated
1 pinch ground nutmeg
1 ground black pepper

Recipe Directions for Toasted Orzo with Peas and Parmesan

Heat butter in a non-stick skillet over medium-high heat. Add onion and salt and cook,stirring often, until onion is soft and beginning to brown, about 5 minutes. Add garlic and cook for 30 seconds. Add orzo and cook, stirring frequently until most of the orzo is lightly brown and golden, 5-6 minutes. Remove from heat and add wine and chicken broth. Return to medium-high heat and bring to boil; reduce heat to medium-low and simmer, stirring occasionally, until all liquid has been absorbed and orzo is tender, 10-15 minutes. Stir in peas, Parmesan, nutmeg, and pepper to taste. Let stand off heat until peas are heated through, about 2 minutes; adjust seasoning with salt and serve.
