This is a sourdough based bread with the toasted oats and walnuts to add flavor. This recipe makes about 10-11 # of dough yielding about 76 2 0z slices.

Recipe Ingredients for Toasted Oats and Walnuts Bread

2 c water
2 c bread flour
3 c whole wheat flour
2 c rolled oats
3 c water
1 1/2 c Walnuts, toasted and chopped
1 oz wheat gluten
2 T dry yeast
2 1/2 c water
2 T canola oil
1/4 c flax meal
1/4 c dry milk
1/4 c molasses
1/4 c honey
1/4 c brown sugar
1 1/2 T sea salt
6 c bread flour

Recipe Directions for Toasted Oats and Walnuts Bread

  1. Toast the oats, add to quart measure with 3 C water and microwave on high for 3 minutes and cool.

  2. Add to Kitchen Aid Mixer bowl and all of the remaining ingredients down to the bread flour. Mix.

  3. Slowly add the bread flour until the dough begins to pull away from the sides of the bowl. Knead for 5-10 minutes,

  4. Let dough rise until doubled in bulk. Punch down and let rise again. Divide into about 6 loaves from 1 1/2 to 2 # and let rise while oven heats to 425 (with baking tiles on second shelf and pan with rocks on bottom shelf).

  5. Add raised loaves directly to hot baking tiles, 1 1/4 C boiling water to heated rocks and close oven.

  6. Bake about 20 minutes, rotate loaves and bake until internal temperature reaches about 200 degrees.
