Clover Honey and Olive Oil Toasted Oats and Dried Coconut, with mixed nuts and dried fruit

Recipe Ingredients for Toasted Museli with Nuts and Dried Fruit

600 g Rolled Oats
100 g Dried Coconut
60 ml Olive Oil
120 g Honey
100 g Dried Apricots
75 g Raisins
50 g Hazelnuts
75 g Almonds
50 g Dried Cranberries
75 g Sunflower Seeds
75 g Pumpkin Seeds

Recipe Directions for Toasted Museli with Nuts and Dried Fruit

  1. Heat Oven to 180 degrees Celsius (Fan Bake if possible).

  2. Put the Rolled Oats and Dried Coconut into a baking dish. Microwave Oil and Honey together in a microwave safe cup for 30 seconds on High or until liquid.

  3. Pour over Oat mixture and stir through with a fork until evenly coated.

  4. Place into Oven, mid-shelf for 5-7 minutes at a time. (Make sure the timer is on, because this can burn fast)

  5. Pull out of the oven at each interval so you can see, when rotating the toasted oats by stirring you can continue to bring up the untoasted oats.

  6. Repeat until evenly golden. (About 20-30mins)

  7. Set aside and leave to cool.

  8. About an hour into cooling, stir through with a fork to break up the toasted oats.

  9. When cool, add remaining ingredients and stir through until balanced.

  10. Store in an airtight container.
