A flavorful side dish or cold salad which is low fat and completely vegan. This recipe takes adaptation very well as virtually every vegetable works well in it.

Recipe Ingredients for Toasted Garlic Quinoa

1/2 cup chopped red onion
2 tsp minced garlic
1 cup quinoa
1/4 tsp salt
2 cups water

Recipe Directions for Toasted Garlic Quinoa

  1. Thoroughly rinse the quinoa in a fine strainer under cold water to get rid of the natural, bitter coating.

  2. Put rinsed, drained quinoa into a large frying pan over medium heat and cook, shaking the pan frequently for around 15 minutes, or until the quinoa turnes golden brown

  3. Remove the pan from heat and pan and cool.

  4. Spray a medium size saucepan with cooking spray.

  5. Saute onion for about 3 minutes, add garlic and saute for another 2

  6. Add the remaining ingredients & bring to a boil.

  7. Reduce heat, stir & cover.

  8. Simmer 15 minutes or until all the water is absorbed.
