Recipe Ingredients for Toasted Farro and Cherry Tomato Salad

2 tbs olive oil
1 1/4 cups brown rice
1 tsp salt
4 cups water
3 tbs olive oil
2 tbs red wine vinegar
1 tsp dried thyme
1 tsp dried oregano
1 tbs finely chopped shallot or red onion
1/4 tsp kosher salt
1 Pepper to taste
1/4 pint cherry tomatoes, halved (about 1 cup)
0.33 cup crumbled feta
1/4 cup olives
1 chopped bell peppers
1/2 chopped cucumber

Recipe Directions for Toasted Farro and Cherry Tomato Salad

In a medium saucepan, heat oil over medium-high heat. Add farro and stir until faro toasts lightly and becomes fragrant (about 90 seconds). Add water and salt, cover with a tight-fitting lid and bring to a boil. Reduce heat and simmer until farro is tender, about 40 minutes. Drain any excess water and cool. In a medium bowl, combine olive oil, vinegar, thyme, oregano, onion or shallot, salt, and pepper. Mix well. When farro has cooled, add dressing and other optional ingredients.
