Recipe Ingredients for Toasted Cumin and Rosemary Rubbed Lamb Chops

2 T Cumin Seeds
1 t Kosher Salt
1/4 t peppercorns
1 t Fresh Rosemary
32 oz Lamb Chops
2 T Canola Oil

Recipe Directions for Toasted Cumin and Rosemary Rubbed Lamb Chops

  1. Toast Cumin Seeds, Salt and Peppercorns in small dry skillet of medium low heat, stirring constantly until fragrant, about 1 minute. Transfer to a motar and pestle or spice grinder. Pound or grind to a coarse powder. In small bowl combine the cumin mixture and the minced rosemary leaves. Mix well, set aside.

  2. Use paper towel to pat dry the lamb chops. Rub a bit of the cumin-rosemay mixture over both sides of each chop.

  3. In large skillet over medium-high, heat 1 T oil. Four at a time add the chops, cook until browned on the bottom, about 3 to 4 minutes. Flip and cook for another 3 to 4 minutes. Serve immediatlely.
