A light and healthy salsa that I add to my taco salads instead of meat.

Recipe Ingredients for Toasted Corn and Red Pepper Salsa

1 clove garlic
1/2 Red pepper
1 cup corn
3 tbs cilantro
1/2 cup onion
1 tomato
2 tbs vinegar
1 tbs cumin
1 tsp salt

Recipe Directions for Toasted Corn and Red Pepper Salsa

Saute garlic, red pepper, and corn in pan until corn and pepper begin to brown. Add cilantro and onion, saute for 3-5 additional minutes. Add vinegar, cumin, and salt and serve. Can add pepper flakes to spice it up.
