Cover dishes with foil and freeze. Uncover but do not thaw before baking. Bake until puffed and dry-looking on top, about 17 minutes for unfrozen or 22 minutes for frozen.)

Recipe Ingredients for TOASTED COCONUT SOUFFLES

2 tbsp unsalted butter
2 tbsp flour
1 1/4 c unsweetend coconut milk, lite
5 tbsp sugar, divided, plus additional for sprinkling
1 1/2 tsp white rum
3/4 tsp coconut extract
1 pinch of salt
5 egg whites, room temp, large
1/3 c sweetened flaked coconut, lightly toasted, cooled, crushed into small flaked

Recipe Directions for TOASTED COCONUT SOUFFLES

  1. Melt butter in med saucepan over med heat. Add flour; whish until bubbling, but not brown, about 2 minutes. Gradually add coconut milk; whish until mixture boils and thickens, about 1 minute. Remove from heat; whish in 2 1/2 tbsp sugar, rum, extract, and salt. Transfer to large bowl. Place platic wrap directly onto surface of souffle base. DO AHEAD: Can be made 1 day ahead. Cover; chill. Bring to room temp; whish until smooth before continuing.

  2. Butter eight 3/4 c ramekins; sprinkle with sugar, titlitng cups to coat completely and tapping out any excess. Place cups on rimmed baking sheet. Using electric mixer, beat egg white in large bowl until soft peaks form. Gradually add 2 1/2 tbsp sugar and beat until medium stiff peaks form. Add 1/4 of white to coconut base and whisk until lightened. Add remaining whites in 2 aditions and fol in with rubber spatual. Fol in crushed toasted coconut. Divide mixture among prepared cups; smooth tops. DO AHEAD: Can be made 6 hrs ahead; cover and chill.

  3. Position rack in center of overn and preheat to 375. Bake souffles until puffed and beginning to brown, about 18 minutes. Transfer souffles to individual plates; gardnish with additional coconut, if desired, serve immediately.
