Crunchy Salsa Chicken (with wheat germ)

Recipe Ingredients for TLC Tracy Crunchy Salsa Chicken

1 cup wheat germ, toasted
1 tbl pumpkin pie spice
1 tbl ground cumin
3/4 tsp salt
1/4 tsp cayenne pepper
2 egg whites
1 tbl water
1 lb skinless chicken breast, 4 halves, boneless
1 large orange, peeled and diced
3/4 cup salsa, chunky medium
1 tbl cilantro, fresh chopped

Recipe Directions for TLC Tracy Crunchy Salsa Chicken

  1. Preheat oven to 400 degrees. Spray baking sheet with nontick cooking spray.

  2. Combine wheat germ, pumpkin pie spice, cumin, salt and cayenne in shallow dish. Beat egg whites and water until frothy in second shallow dish. Dip chicken into egg white mixture and then into wheat germ mixture. Dip and coat chicken again, coating thoroughly. Arrange on prepared baking sheet. Lightly spray tops of chicken with cooking spray.

  3. Bake 18-20 minutes or until chicken is no longer pink in the center.

  4. Meanwhile, while chicken bakes, combine salsa ingredients (orange, salsa and cilantro) in a small bowl. Serve with chicken.
