Broiled Vegetables with Bell-Pepper Sauce Need to make the yogurt cheese ahead of time; takes at least 4 hours of refrigeration to make the cheese.

Recipe Ingredients for TLC Tracy Broiled Vegetables with Bell-Pepper Sauce

1 spanish onion, cut in 12 long wedges, each speared with a toothpick
2 beets, cut in 1/4 inch thick rounds
2 sweet potatoes, cut in 1/4 inch thick rounds
1 red pepper, halved and seeded
1 yellow pepper, halved and seeded and cut into wedges
4 cups mushrooms, portobello caps (not really 4 cups but 4 mushroom caps
3/4 tsp salt
1/2 tsp pepper
1 1/2 cups plain lowfat yogurt
1 tbl lemon juice
1 tsp minced garlic

Recipe Directions for TLC Tracy Broiled Vegetables with Bell-Pepper Sauce

  1. Remove broiler pan with rack. Heat broiler. Mix vegetables in a large bowl; coat with nonstick spray; sprinkle with salt and pepper. Spread 1/3 in a single layer on broiler pan rack.

  2. Broil 6 minutes per side, or until tender and charred. Remove to a platter. Repeat with remaining vegetables.

  3. Wrap hot bell pepper in paper towels. When cool, remove skin; put red pepper in a food processor or blender.

  4. Add Yogurt Cheese, lemon juice, garlic and 1/4 tsp of salt. Puree until smooth, serve on vegetables.

  5. (For Yogurt Cheese: Set a medium strainger over bowl; line with 2 layers of paper towls or a paper coffee filter. Add 1 1/2 cups of plain lowfat yogurt, cover with plastic wrap, refrigerate at least 4 hours. Scrape cheese into bowl; refrigerate until ready to use.
