After a year of trial and error this comes close to what a restaurant close to me made. Sometimes a kid in culinary school is a good thing :-)

Recipe Ingredients for TJ's at Home Tortilla Soup

2 cups onion
1 cup carrot
1 cup celery
1/2 cup jalapeno
14 1/2 oz diced tomatoes (143232)
2 lbs boneless chicken
16 oz pico de gallo
58 oz chicken broth (102616)
1/2 cup cheddar cheese (99790)
1 avocado
2 tortillas (99208)

Recipe Directions for TJ's at Home Tortilla Soup

  1. Dice onions, carrots, celery and jalapeno sweat in large stock pot.

  2. Combine chicken broth and diced tomatoes and heat separatly.

  3. dice avocado.

  4. Preheat oven to 350.

  5. Place boneless chicken breast in shallow pan season with onion powder, garlic powder, cumin and caynene pepper to taste.

  6. top with pico de gallo.

  7. cover with foil tightly and bake for 45 min.

  8. combine broth with veggies and simmer for 30 min.

  9. strain veggies from soup and set aside (optional)

  10. slice chicken into strips

  11. cut fresh tortillas into strips and pan fry till crisp and drain on paper towel.

  12. To serve place scoop of veggies into bowl add broth and diced avocado.

  13. top with cheese and tortilla strips.

  14. We used both regular and low sodium broth also 2 percent cheddar cheese shredded
