yummy sausage and potato chowder, just like my papa made, only without the meat and milk

Recipe Ingredients for tjcm's vegan sausage potato chowder

1 T olive oil
1 large onion, diced
3 stalks celery, chopped
1 1/2 c sausage-style crumbles
7 large potatos (red or russet), cut into bite size peices or 1/4 inch slices
28 ounce Fat Free Vegetable Broth (I use Swanson vegetarian vegatable broth)
4 c soy milk,
1 t white or black ground pepper (or to taste)
1 t salt (or to taste)

Recipe Directions for tjcm's vegan sausage potato chowder

  1. cook onion, celery and sausage in oil until onion is translucent, DO NOT BROWN ONION (about 5-8 minutes)

  2. add potatoes and broth, cook until potatoes are tender

  3. add milk and pepper, simmer to desired consistency (about 10 to 20 minutes)

  4. don't forget to stir often and cover while cooking. If cooking over a long period of time, add water to maintain levels as needed.
