Recipe Ingredients for tjcm's ratatoille

2 tablespoons canola or olive oil
10 oz onion, chopped
8 oz zucchini squash, cubed
8 oz yellow crookneck squash, cubed
8 oz eggplant, peeled and cubed
3 medium carrots, peeled and diced
1 green pepper, thinly sliced
1 yellow pepper, thinly sliced
1 red pepper, thinly sliced
180 g stewed tomatoes
4 cloves garlic, minced
1 T fresh basil
1 T oregano
1 T rosemary
1 T thyme
1 T sage
1 T coarse black pepper
2 T parmesan cheese

Recipe Directions for tjcm's ratatoille

  1. mince onion

  2. cube remaining veggies

  3. cook carrots with spices and oil for about ten to 15 min

  4. put in onion, squashes and eggplant

  5. cook for about 15-20 more minutes

  6. add tomatos and parmesian cheese\

  7. simmer, covered, for 30 min
