This is my own version of Panera bread's black bean soup. It tastes a lot like it, and I love it!! Most importantly, it's vegetarian, just like the original! But I don't cook with added salt, unless absolutely necessary. Oh, and there's no way you can convince me to cook with regular Kruner's black beans, we use the "NO SALT ADDED"(35mg per can) here!.

Recipe Ingredients for tjcm's Panera-like Black Bean Soup

1 onion, finely chopped
2 cloves garlic, minced
2 stalks celery, finely chopped
1/4 large red bell peppers, finely chopped
1 1/2 c vegetable broth
30 oz black beans, 2 cans, undrained
1/2 teaspoon cumin ( I add a little more than this, but just a LITTLE)
1 1/4 tbsp lemon juice
1 1/2 T cornstarch

Recipe Directions for tjcm's Panera-like Black Bean Soup

  1. 1. In a pot, combine the first six ingredients; simmer for 10 minutes.

  2. 2. Add half a can of beans, salt and cumin; cook for 5 minutes.

  3. 3. Puree soup (I use an immersion blender which makes it easy to do it right in the pot).

  4. 4. Add the rest of the beans to the soup.

  5. 5. Combine the cornstarch with 1 1/2 tablespoons of water.

  6. 6. Add the lemon and the cornstarch to the soup; cook until thickened.
