1 eggplant, sliced about 1/4 inch thick
24 oz classico Mushrooms & Ripe Olives
1 oz mozzarella cheese alternative

Recipe Directions for tjcm's eggplant marinara

  1. preheat oven to 350

  2. slice eggplant

  3. alternate layers of eggplant with layers of sauce in 7 by 11 inch pyrex pan

  4. top with grated sheese

  5. cook for 45 minutes until eggplant is cooked through
