*do not add tomato.* (is not as good) Taken from Davida website for CKD patients.^ ^that site says to sprinkle 1.4t dill on top of cucumbers instead of pickle juice.

Recipe Ingredients for tjcm's Cucumber Sandwiches

2 oz fat-free cream cheese
2 T fat-free mayo
1 1/2 T Italian Seasoning
1 1/2 g juice from dill pickle
8 slices white bread
1 cucumber, sliced

Recipe Directions for tjcm's Cucumber Sandwiches

  1. In small bowl mix cream cheese, mayo, Italian seasoning, and pickle juice.

  2. Refrigerate for at least 1 hour (if you have time, if not, that's ok)

  3. spread cream cheese mixture on the bread

  4. top half with cucumber slices

  5. put remaining bread on top

  6. cut sandwiches in half.

  7. serve (cut into fourths for appetizers.)
