Recipe Ingredients for tjcm's chicken enchilladas

14 oz chicken breasts, shredded
10 oz yogurt, plain, greek
10 oz shredded cheese, divided in half
10 3/4 oz soup, cream of chicken
12 (10?) flour tortillas
10 oz green chili sauce

Recipe Directions for tjcm's chicken enchilladas

  1. cook & shred chicken (steam, boil, or roast chicken until it's falling apart, then pull apart with fork.) - I put chicken in half a pan of water, then add 1/2 can of chili sauce to the water & chicken, and boil it at medium heat until it's chili sauce consitency again two or three hours, stirring often.

  2. mix yogurt, soup, chili sauce and half of cheese

  3. combine with chicken, reserving some of mixture to top enchiladas

  4. divide chicken mixture into tortillas

  5. place in (prepared) pan with sides

  6. top with yogurt/soup sauce

  7. top with cheese

  8. bake for 30-40 minutes at 350 degrees
