Light version of the Italian classic

Recipe Ingredients for Tiramisu

2 cups strong coffee
2 tbsp sugar
2 tsp cornstarch
2 cups skim milk
1 cup part skim ricotta cheese
7 ounces fat free pound cake , cubed
1 1/2 ounce bittersweet chocolate, shaved
99 grams chocolate Pudding
532 grams Whipped Topping Fat Free, 3 cups

Recipe Directions for Tiramisu

  1. To prepare syrup: in small saucepan over medium-high heat, bring coffee /espresso and sugar to boil.

  2. Add cornstarch and cook 5-6 minutes or until thickened. Remove from heat and cool.

  3. To prepare pudding: Prepare pudding according to package except use 2 cups of milk instead of 4. Chill.

  4. To prepare ricotta: Mix together ricotta and 1 cup of whipped topping.

  5. Assembly: press pound cake cubes into bottom of large glass bowl, spreading evenly.

  6. Add ricotta mixture to bowl, spreading evenly.

  7. Spread chocolate pudding on top of ricotta.

  8. Top with remaining whipped topping.

  9. Sprinkle with chocolate shavings.

  10. Chill one hour before serving.
