Made 11/5/08 :)____From CIA book @ Bammy's. EDIT: Add 1 whole egg, and 1 Tbsp. cornstarch to filling. Espresso has been reduced from proportions in recipe. Entered 11/6/08- calories are messed up... really 430 total, 108 from fat. And 17.4 g protein!!

Recipe Ingredients for Tiramisu I

3/4 c. egg beaters
3/4 c. sugar
20 oz. part-skim ricotta cheese
2 1/4 egg whites, powdered
6 tbsp sugar
1/2 c. espresso, 1/2 c. kahlua
36 ladyfingers, 1 GOYA pkg
1 oz. semi sweet chocolate, chopped (for top)

Recipe Directions for Tiramisu I

  1. Cook eggs & sugar over simmering water (in mixer bowl). Whisk constantly, 5-6 min, til doubled in volume and lemon-yellow. Beat 8-10 min til cool (using mixer).

  2. Mix in 1/2 of ricotta, add 1 tsp. vanilla. Follow w/ remaining ricotta. Remove filling to separate bowl. Clean mixer bowl thoroughly.

  3. Beat egg whites to froth w/ 5 Tbsp. water, add sugar once powder is dissolved and beat to peaks. Fold into ricotta mixture in 3 additions.

  4. Finally, arrange 12 ladyfingers in bottom of pretty dish. Brush w/ mixture of espresso and kahlua. Spread 1/3 of ricotta mixture over this. Repeat layers to finish both mixtures, ending w. ricotta. Sprinkle w/ chocolate, refrigerate 3 hours or overnight to blend flavors.
