Tim's Chicken & Rice made with mushrooms, carrots & peas

Recipe Ingredients for Tim's Quick Chicken & Rice Recipe

2 cups brown rice
40 ounce chicken breasts
12 oz. sliced mushrooms
20 oz. frozen peas and carrots
32 oz. chicken broth

Recipe Directions for Tim's Quick Chicken & Rice Recipe

  1. Soak brown rice overnight (24 hrs) then cook according to package directions.

  2. Cook frozen chicken breasts in chicken broth.

  3. Dice cooked chicken and return to broth.

  4. Add drained mushrooms (2 cans), frozen peas-n-carrots mix.

  5. Combine with cooked rice and simmer off excess liquid.

  6. Add salt and pepper to taste.
