Recipe Ingredients for Tilapia, Taters and Maters

7 oz Tilapia
3 1/2 serving Diced with Basil Garlic and Oregano Tomatoes
3 1/2 serving Del Monte Diced Tomatoes with Basil, Garlic and Oregano
395 grams Whole New Potatoes
3 tsp Garlic
1/4 medium (2-1/2" dia) Onions
1 dash Pepper, Black
1 tbsp Olive Oil
1 tsp Ground Ginger

Recipe Directions for Tilapia, Taters and Maters

  1. Saute onions and garlic in olive oil in a pan

  2. When onions are translucent, add Tilapia

  3. Cook fish through until almost white

  4. Add Ginger

  5. Pour small amount tomatoe juice to deglaze the pan

  6. Cook fish until completely white

  7. Add Tomatoes

  8. Add Potatoes

  9. Spice Appropriately

  10. The amounts of spice should vary depending upon your tastes
